14 October 2012 - Pumpkin Chocolate Chip Cookies

Does the end of November mean we have to stop thinking about recipes with pumpkin?  I hope not.  I like pumpkin.  So when I came across this recipe, I thought it seemed like an intriguing dessert for a Football Foodz day.

I found this one over at Favorite Family Recipes.  I'm glad I did.  Cookies have been a fun new thing for me lately.

Ingredients:

1 box of spice cake mix
1 15 oz can of pure pumpkin
1 bag (10 oz) of bittersweet chocolate chips

I followed this one exactly.  I am too chicken with regards to baking to make changes or take chances.

Directions:

Preheat oven to 375.

Mix the cake mix and the pumpkin together until blended.  Then, fold in the chocolate chips.

Drop by spoonful onto a greased cookie sheet (I used a Silpat) and bake for 8-9 minutes.

Some tips:

Make sure not to drop in too big a spoonfuls or the cookies get huge.

Working with cake mix cookies can be a bit tricky seeing as the dough grows a BUNCH in baking.

These were pretty good.  I think I personally preferred the flavor of the dough to the actual cookie.  The CEO really wanted nothing to do with these and. as it was before I figured out that his coworkers will happily eat my leftover cookies, I ended up throwing some of these away, which made me sad.

If you like gingerbread cookies and the like, these are tasty.  I just couldn't eat them alone.

I made Pumpkin Spice bread on the same day, which was epic.
