There is something you should know. The CEO maybe has the best family ever. From his mother, who may be a saint, to his cousins who are giving, caring, and funny, I have never felt so instantly accepted by a group of people.
Something else you should know. The CEO and I were born one year and seven days apart. So that means each year we have to share a birthday. And we LOVE it. It means a whole week of birthday time.
So when The CEO's mother reached out and said she wanted to include me in the family birthday party for September, first I cried and then I said "OMGTHANKYOUSOMUCHYESYESYES!"
This past weekend, the boys (Teddy and Simon the pups), The CEO, and I went to Pennsylvania to celebrate the births of he, his cousin Jeff's awesomesauce girlfriend Tara, and me! I decided I wanted to make something in the crockpot. The CEO's mom kindly loaned me hers and this is what I made:
Crockpot Bacon and Cheese Dip
The Ingredients:
16 slices (12 oz) bacon, pre-cooked
16 oz cream cheese, cut into chunks
4 cups shredded cheddar cheese (I used sharp)
1 cup plus a little more later of half and half
3 teaspoons Worcestershire sauce
Garlic powder to taste
1/2 teaspoon dry mustard
1/2 teaspoon salt
hot sauce to taste
Directions:
Chuck everything into the crock pot (except use only two teaspoons Worcestershire and one cup half and half) on high. Keep on high, stirring frequently, until all melted together. Reduce to low and cook about an hour and a half. When everything is warm and cooked and gooey, taste it. Then adjust. I had to add more half and half, Worcestershire and some hot sauce. This part if really up to you.
Then, turn it on warm until you are ready to serve and serve with whatever you want. We had tortilla chips and some pepperoni slices...but anything will do.
Verdict:
Well, I was so excited that I forgot to take a picture. But this was GOOD. It disappeared quickly. Maybe The CEO's family was being nice (as I mentioned they are SO NICE) but I think everyone liked this...I will make it again, The CEO will insist.
Family is so important and with mine in Georgia, it is so wonderful to have people who are kind, loving, and warmly invite me in. I am a lucky lucky girl.
Also, on Saturday we had a barbecue at The CEO's Dad's house and he makes most excellent burgers. I must get the recipe.
Next up: I may cook something tonight or I may wax on about my love of Cracker Barrel. I'm not sure which yet.
