31 August 2012 - An ode to Velveeta

When I was a little girl, my grandmother would make incredible things out of Government Cheese.  Most notably, when I was sick with a cold and would stay with her, she would make epic cheese toast in the oven the likes of which I have been unable to recreate and even my father (who tried after her death) just couldn't make happen. 

And while there are entire Chowhound Topics about how amazing Government Cheese is, where to find it, and general reminiscing about life when we had access to it (you know, before we became self sustained adults with jobs and didn't need Government Cheese) I have had to fill the void in other ways.  Now that I tupe this, however, I realize the government could probably make good money selling this stuff for $20 a block to NYC insurance brokers like me who would pay that. 

But anyway, what has finally made life bearable for me is non other than Velveeta.  I'm so lucky that The CEO is a Philly boy.  We would put Velveeta on everything.  And the truth is, if something I made is particularly yummy, I probably put Velveeta in it...that's how I roll.

It's great in the crock pot, in sauces, on cheese fries...I could go on but I'm annoying myself.

So, since I have done very little cooking of note this week.  We've been noshing on leftovers and stuff, I thought I would share with you some of my favorite curated Velveeta recipes.

All Recipes shows something called Potato (Velveeta) Cheese Soup that is essentially a pound of the stuff with potatoes, seasonings and...wait for it...Tony Chachere's.  I'm IN

This recipe shows you how to make chocolate fudge with Velveeta.  I am telling you, the stuff is like magic.

Texana's Kitchen has THIS recipe for Green Chili Cheese Dip that is basically two cheese PLUS Velveeta PLUS milk PLUS butter.  it may take a week off your life but you'll be dead, right?  You won't miss it.

If you are really feeling adventurous, have this Bacon Cheeseburger Macaroni from Plain Chicken

This weekend, I will be putting some Velveeta in the corckpot for The CEO's family to enjoy.  I'll tell you all about it.

  1. fascinating! i've never had government cheese, but i have had velveeta. i also love that there is this generational thing going on where our mothers and grandmothers (speaking as a 20 something here) did these incredible things with highly processed foods, and those are the recipes they've passed on. lovely, and fascinating, when it comes to food history and trends.
