8.28.2012 - Just When I Thought I Knew What I Was Doing

Oh, I am such a failure sometimes.  I do dumb things.  For example, I take a swig of soda right after a bite of food even knowing that I have a lap band and it is going to geyser out of me in a most uncomfortable way.

And sometimes I take a perfectly nice recipe and destroy it completely.  And that's what I did Tuesday.  Oh yes I did.

I had been waiting to try out the Cheesy Zucchini Quinoa recipe I saw on Running to the Kitchen.  And on Tuesday The CEO was out so I could make something involving cheese, zucchini, and quinoa.  I didn't exactly have the stuff for the recipe but I thought....close enough.

The Ingredients:

1 tablespoon extra virgin olive oil
3/4 cup quinoa (the recipe use 1/2 cup quinoa and 1/4 cup brown rice but I don't eat rice much so I did all quinoa)
1 bay leaf
1 1/2 cups chicken broth
1 cup shredded zucchini
1 cup cheese (I used a smidge of siwss and some manchego even though the recipe called for parmesan.)
salt and pepper to taste

What I did:

Heat the olive oil in a small pan over medium high heat
toss the quinoa in to coat it and roast it a little (no more than a few minutes)
Add in the chicken broth and the bay leaf and bring to a boil.  Reduce heat and simmer until all the liquid is absorbed.  Then, stir in the zucchini and the cheese and season to flavor.

The Final Say:

This didn't taste bad, it just made me sick.  I think Parmesan is the way to go.  I don't know if the rice would have made it better...regardless, I am a failure.  Here is the food right before I ate it.

Next up:  I am not at all sure.
