This is going to be a super fast one because I am not even sure I should post it.
I forgot to take notes or pictures when I made this bread. I bit off a tad more than I could chew on a Football Foodz day and I was so darned proud of myself for making bread at all that I spaced.
But I would be remiss in not telling you about this recipe.
I found this recipe for Pumpkin Spice Bread at Harvest Moon by Hand.
Here's how you make it:
Ingredients:
1 cup sugar (the recipe called for 1.5 but I didn't have this much and it didn't make it taste bad...for sure)
2 beaten eggs
1/2 cup vegetable oil
1 cup pumpkin
1 2/3 cups flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg (I grated it myself...oof)
1/2 teaspoon cloves (I doubled what was in the recipe because I adore the flavor of cloves)
Directions:
Preheat oven to 325 degrees.
Mix the sugar, eggs, oil, and pumpkin together in a bowl. In another bowl, mix all other (the dry) ingredients. Combine the dry ingredients to the wet ingredients.
Grease a bread pan (mine was glass) and pour in your batter. Bake for an hour.
I ate this every day for breakfast warned with a little butter. It was delicious. Seriously, it was moist and even I could eat it.
I want to make more for Christmas.
