7 October 2012 - Paula Deen's Baked Brie, Y'all

I just loving typing y'all (sometimes I even say it).

Anyway, I had a fellow brie fan in The CEO's stepfather and I saw that as the perfect opportunity to bake some brie.

Some people like to wrap it in phyllo or a pastry of some sort but I think that is total folly.  It just takes away from the flavor of one of the most amazing cheeses there is to eat.

So when I had the chance, I jumped at it an wanted to go simple.  I came across Paula's (as a Georgian/Savannahian we are on a first name basis) recipe, modified it right away and baked baked baked.

Ingredientes:

1 14 oz round of brie (you can buy the cheapest kind the store has...since you are baking it, there is no need to be fancy)
1/4 cup brown sugar
1/4 cup chopped pecans (I used a small food processor to chop them, it was fun)
2 tablespoons balsamic vinegar

the recipe calls for brandy.  I don't drink brandy, neither does The CEO's family, and I didn't feel like buying a bottle of brandy for a tablespoon or two...so I improvised. It worked out fine.

Dirreciones:

Mix the brown sugar, the chopped pecans, and the balsamic together and place in the fridge.  The original recipe says overnight, I didn't have that kind of time.  Mine sat maybe an hour.  It worked fine.

Preheat the oven to 400.  I used this temperature because the oven had things in it and was set to this temperature already.  Again, worked out fine.

Put the brie in the oven for 7 minutes or so, until it is starting to get warm and melt.  Remove it from the oven and spread the nut mixture on top.  Put it back in the oven for 8-10 minutes, until the brie puffs out a bit and has melted.  Let it cool a bit and then serve with fruit or crackers.

Simple.  Perfect.  Delicious.
