6 September 2012 - Comfort Potatoes

Yesterday, The CEO and I needed some comfort. 

It was a horrible day. 

He felt awful, I felt tired and sad. 

He wasn't hungry but I was.  So I went to the store and bought some of these:

Canned potatoes.  I dunno.  I like them.  The consistency is nothing like non-canned but these have a time and a place for sure.

And I already had some of this in the firdge:

2 lbs of cheddar from Costco...
Here is what all I put in my very own easy peasy comfort potatoes recipe:

One can of potatoes (I prefer Del Monte...the Key Food brand tends to have major imperfections)
One chunk of sharp cheddar
One Tbs butter (you can use spray butter or something healthier but there are already potatoes and cheese, you know)
salt
pepper
seasoning salt
garlic powder

Directions:

Melt the butter in the pan and add the potatoes, as small as you like them chopped.  Then season them and get them coated in butter.  Cook until the butter is absorbed and the potatoes start to brown a little.  Then, shred or cut the cheease into small pieces and add it to the potatoes until melted. 

Serve.

Now, I thought I was the only person on Earth who would eat this gooey cheesy mess but The CEO immediately had a bite and LOVED it. 

This is definitely a cheat but so comforting and with only one can of potatoes, we didn't eat much.  I first started doing this after laop band surgery as it was mushy and easy to eat.
