On Saturday, The CEO bought me black truffle salt. We were at a store and he decided that (upon seeing my face when I saw it) I needed it. He said "You can put this on some fries tomorrow." And he was right. I could. And I did.
I think truffles are among the greatest foodstuffs ever discovered. And having this salt is just EPIC for me. I am so excited.
So, as a part of Sunday's Football Foodz extravaganza, I made some pan fried french fries with truffle salt. And I doctored up the ketchup for good measure.
What You'll need:
One large potato
butter, oil, or ghee
truffle salt
truffle oil
ketchup
asiago cheese
To Do:
First, cut up the potato into french fry sized pieces. I half then quarter, then chop up the quarters but it is a pain no matter which way you slice it so leave yourself time.
Then, melt a few tablespoons of your lubricant of choice (I used ghee, or clarified butter, as I love the flavor and it doesn't separate the way butter does) in a pan over medium high heat.
Toss the potatoes into the oil and let cook for a good ten minutes. Check on them occasionally.
In the meantime, put your ketchup in a bowl of your choice. Add a teeny bit of truffle oil to taste and then sprinkle some truffle salt to taste as well. Set aside.
By now, the fries should be brown. Flip them around and cook another 5 minutes or so until they are soft. Transfer them to a paper towel lines plate to absorb any excess grease. Then, move to an oven proof serving dish and sprinkle them liberally with grated asiago cheese. Pop the platter in a warm oven for a few minutes (if you have a microwave, that would work too) until the cheese is melted. Remove, salt the fries with the truffle salt, and serve.
Voila! Easy and delicious. The CEO ate almost all of these and asked for more. You could make a larger batch if you want but, as this was just us, we were fine with a smaller batch.
