13 September 2012 - My Very Own Chili

I typically cheat when I make chili.  I will use a spice pack and there is nothing wrong with that.  McCormick makes some good ones...even one with cheese in it...nom.

But today I decided to be industrious and try my own.  So, here it goes...my very own chili recipe.  Or basically, "comb through your spices and take out everything that looks like it might go in chili" chili.

Ingredients:

1 lb chuck stew meat, cut into bite sized portions
1 lb ground beef
1 can black beans, rinsed
2 cans pinto beans, rinsed
3 cups beef stock
2 cans tomato paste
2 cans water
1 cup red wine
Spices for chili (i used salt, white pepper, chili powder, oregano, paprika, and cayenne)

Directions:

Put everything in the crock pot, cook on low until mostly done. Taste.  Adjust the seasonings to taste and cook a bit longer.  All in all, this took about 5 hours on low.

Let cool.  Consume with some shredded cheese on top.

This makes probably 6 or so servings, which is perfect because chili make a great lunch.  Also, I love my snap top containers from Costco.

This was really good.  The red wine added amazing flavor.  The CEO loved it.  I ate a whole bowl....verrrrrrry slowly but still.  I think it could stand to be a bit thicker but we will see once it has some fridge time.

I am so proud of myself.
