12 September 2012 - Crockpot Basil Chicken and Faki

I'm back to cooking.  Woohoo.

Last night I wanted to try some chicken in the crock pot.  I had come across a recipe in my travels for a lemon basil chicken that looked pretty good but not exactly what I wanted. 

I also wanted to make something with lentils.  I had a recipe for Faki, which is a greek vegetable and lentil soup. 

I made them both.  In my own way.  Here's what happened!

Red Wine Vinegar Crockpot Chicken
adapted from THIS recipe by Family Fresh Meals

Ingredients:
4 chicken thighs, skin on
3 cups chopped carrots
3/4 cup chicken broth
3 tbsp red wine vinegar
1 tbsp dried basil
1 tsp dried celery

Directions:
Place the carrots in the crockpot; put the chicken on top of the carrots;
Whisk the chicken broth, vinegar, basil, and celery together;
Pour the liquid mixture on top of the chicken;
Cover and cook on high in the crockpot for four hours

And now for Faki
Adapted from THIS recipe

Ingredients:
1 large shallot, chopped finely
4 carrots, also chopped
1 1/2 tsp dried oregano
4 gloves of minced garlic
1 1/2 tsp olive oil
3 bay leaves
1 1/2 cups dried lentils
1 can tomato sauce
1 squirt agave
4 cups vegetable stock
1 cup water
2 1/2 tbsp red wine vinegar
salt and pepper

Directions:
Process the shallot, carrots, oregano and garlic until it forms a chunky paste (this makes the veggies cook faster);
Heat the oil in  pan and saute the mixture with the bay leaves for about 15 minutes until they are soft;
Add the lentils and coat them in the mixture;
Add tomato sauce, water, stock, and agave in the pot and bring to a boil;
Turn down the heat to medium low;
Simmer for about 45 minutes until the lentils are firm but not crunchy;
Stir in the vinegar and salt and pepper to taste;
Cook on low another five minutes;
Cool and serve

So how did it go?

Well, I got a text message this afternoon that said "Also, gfd lunch is delish!!!!"

So I guess it went ok.  I think the red wine vinegar really marries the flavors and although I departed pretty far from the actual lentil dish, it was tasty.
