Many moons ago, I saw this recipe on the oft mentioned and imitated Kitchen Life of a Navy Wife. I swear she has the best recipes. I kept mentioning it to The CEO and he kept choosing other recipes. I think he thought it was going to be mushy or not flavorful. So it took awhile to get around to making this dish.
I think The CEO regrets that now. This dish has become one of the staples in our home. It is tangy, nutritious, low carb, and yummy. It has a butteriness to it that is a bit inexplicable. At any rate, this stuff is good.
That's what it looks like when I first dump it into the Ninja.
This dish has evolved for me. I initially used chicken thighs, then tried boneless, skinless chicken thighs (better), and last time I added chunks of a left over baked chicken (the flavorless one previously mentioned) in with the boneless, skinless chicken thighs...BEST.

So simple, in fact, that I almost feel insulted that The CEO likes it more than some of the dishes on which I have slaved away. But I am not upset because it really is a genius meal. Try this next time you are tired and don't wanna cook.
On other notes, I am so into the Josie Maran argan oil soaps that I have been struggling to branch out. Perhaps someone should have The CEO hide them from me. The CEO, however, has been trying out tons of handmade man soaps and has a few favorites. I surely wish he would write a guest blog.
Finally, I put the finishing touches on my hot water bottle cover (complete with cables) on Tuesday and then spent the better part of a day trying to roll my skein of KnitCrate's Puddle Jumping by Jill Draper before casting on a new sock. It has a 3 x 3 rib on the leg part of the sock and so far I am loving it. For once, my cast on seems to have been right the first time! At any rate, its fun and I am working toward my dream of making everyone dear to me a pair of socks.
