16 September 2012 - Honey Chipotle Turkey Meatballs

Sometimes there are recipes so good that even I don't mess with them (much). 

I know, I should have warned you to sit down before you read that.

This recipe just screams "Feed me to THE CEO."  And, as I suspected he gave a hearty "OH YES!" when I suggested this dish.  So here we go:

You'll Need:

1 lbs ground turkey
1 shallot
2 cloves of minced garlic
1/2 tsp salt
1/4 teaspoon black pepper
4 tablespoons honey
2-4 tablespoons chipotle chilis in adobo sauce, chopped
4 teaspoons cider vinegar
2 tablespoon olive oil

You'll notice I used half a pound less turkey than the original and the same spices.  Sometimes I am crazy like that.  It worked fine.

You'll Have To:

Preheat the oven to 375.  Then, in a mixing bowl, mix the turkey, shallot, garlic, salt, and pepper.  I used my hands :P.  Then, form the meat mixture into meatball sized balls.

Meanwhile, heat the olive oil in an oven proof (important!) skillet until it is hot.  Add in your meat balls and cook on medium high heat until they are browned on all sides.  This took me about 15 minutes.  Then, put the whole pan in the oven for five minutes. 

While that's doing, comvine the honey, chilis, and vinegar together. 

Take the pan out of the oven and pour the mixture on top.  Put the pan back in the oven for 5 minutes but take them out and toss them around to coat about halfway through.

Remove, let cool, serve them.

Thanks to Fake Ginger for this one!!!!  I mean, seriously, these are good.  The CEO ate as many as he could.  They are pretty good for you, too.  Everything comes out so balanced.  Chipotles are spicy business but the honey adds sweetness and the vinegar ties it together beautifully.

I am so going to make these again.  Were it not for my next recipe to share, these might have been the MVP.
