Yesterday marked time to get out the crockpot and make some dinners! Nom!
I cruised the internet looking for something with lentils that would be tasty and nutritious. I couldn't find anything I really liked so I decided to riff on various things I have been reading and chuck it all in the crock and hope for the best!
Here are the ingredients:
One package of sausage. I used five links of chicken sausage with sun dried tomatoes, sliced.
1 cup lentils
5 carrots, peeled and sliced into rounds
1 bulb fennel, chopped
1 shallot, diced
3 or so cups of kale
3 cups beef broth
3 gloves minced garlic
spices to your taste. I used:
salt, white pepper, seasoned salt, cayenne pepper, and garlic salt
Directions:
Put everything except the kale in the crockpot. Turn it on low and cook it until done. This took awhile, probably 7 hours. It would probably cook faster on high but I was out brunching and pub crawling. Just when it seems like everything is going to be done, stir in the kale. Turn off crockpot, let it cool and eat it.
This is really delicious. It is fancy but flavorful and chock full of things that are good for you.
The CEO liked it tremendously. And I don't blame him. This is going to make some great lunch all week. And these sausages we bought at Costco are so far more than a little awesome.
