20 August 2012 - Chicken Noodle Soup

I didn't feel well today.  This lap band is really killing me lately.  Maybe its stress, maybe its summer, maybe its the tightness from my last fill and the pressure of the last 20 lbs.  Who knows.  Anyway, I made this to settle my stomach:

Fast and Easy Chicken Noodle Soup - For one
I cruised the Inter webs looking for chicken soup recipes to get ideas and got much of my plan (such as it was) from the Homemade Chicken and Noodles recipe by The Pioneer Woman.  If you don't read the blog I just linked, you should.  Really.

Ingredients:

Water
4 small chicken bouillon cubes
2 medium carrots, peeled and cut into small rounds
2 or so ounces of chicken breast, I used raw but if you are afraid of salmonella, you can cook it first
A handful of egg noodles
cumin
turmeric
garlic salt
white pepper
1 tbsp flour

Here's what I did:

Fill a medium sauce pan about 3/4 full with water and bring to a boil.  When the water is just about to boil, add the four chicken bouillon cubes and stir until the are dissolved.  Add in the carrots.  Let them cook on a heavy boil for a minute or so then add the raw chicken (if you pro-cook it, I would wait until later).  Let that all boil while you do things around the kitchen or talk to your honey or whatever.  When the chicken is done and the carrots are as soft as you like them, toss in the egg noodles and lower the heat to medium low.  These cook fast so stir in the turmeric, garlic salt, white pepper, and cumin to taste while they get soft.

As a final step, I stirred 3 tbsp water in with the flour to make a sludge and then poured it into the mixture (this is the epic idea I got from the Pioneer Woman).  This thickens the broth to a homestyle consistency that is awesome and gorgeous.

Let it cool and thicken and then eat eat eat.

An analysis:

This may be the best darned chicken noodle soup I ever made.  It was fast, it was soothing and it was spicy in the right way...the cumin and turmeric made it special.  Make this when you don't feel well or have a bad day.  It'll make you feel better...promise.
