19 August 2012 - Breakfast Quinoa is Awesome

The CEO woke up Sunday morning and remembered that he was supposed to be somewhere.  So I found myself alone in the house and hungry.  I thought this was a great time to try breakfast quinoa.  I have about 5 recipes for these saved and just haven't made it yet.

I adapted my recipe from several sources.  Here they are:

Here's what I used (all based on what I had on hand):

1/2 cup uncooked quinoa
1 cup water
1/4 cup milk
1 tsp cinnamon
1 1/2 tsp vanilla extract
1/2 banana, sliced
2 small strawberries, sliced
1 medium fig, chopped
a handful of roasted
honey, to taste

What I did:

I wanted my quinoa to be like quinoa.  I wasn't trying to create an oatmeal-like consistency so I was most drawn to the Ambitious Kitchen preparation.  You could do this however you want.

Cook the quinoa in a sauce pan with a 1:2 ratio. So put the quinoa and the water in on high and bring to a boil.  Once it starts to boil, turn the heat down to low and add the cinnamon and the vanilla.  Cover the sauce pan and let the quinoa cook for about 15 minutes until the liquid is absorbed.  Then, I put in the milk, mixed it in and covered the pan again.  I let it cook for another 3 minutes or so, then took it off the heat and let it sit for about 10 minutes to both cool off and soak up all the liquid.

While I was cooking the quinoa, I roasted some walnuts in the oven on a baking pan at 500 degree heat.  you can use pre-roasted walnuts, I just happen to usually have raw nuts around.

When the quinoa was cool and dry, I fluffed it and divided it into two portions.  I refrigerated one portion (we will see if it reheats well) and mixed in the fruit and nuts with the quinoa in the portion I intended to eat.   Finally, I drizzled the mixture with a bit of honey.  This is not a super sweet dish so add this to taste.  You might want more honey.

I enjoyed this so much.  I ate the whole bowl.  That never happens in a post lap band world.  It went down easy, it felt nourishing and it tasted great.  It isn't as heavy as oatmeal, which I like.

I think I will experiment with different fruits and I would like to try this with almond or coconut milk.
